Fried rice is a tasty, delicious and colourful rice delicacy that is pretty much easy to prepare. Here's how
Fried rice is a nutritious rice recipe characterised with lots of veggies.
Like the name of this dish, fried rice is basically rice that is fried. As a matter of fact, the rice, the veggies and everything that goes into this special delicacy is fried, which makes it sweeter and tasty.
Fried rice can be a little technical to prepare because, if it gets too soft, it becomes soggy and mashed up. On the other hand, if it's too hard, it becomes really difficult for the rice to absorb the seasonings and this sort of ruin the taste of the fried rice. So, it's important to get the right texture and taste when making this food.
Anyway, here's how to make a super sweet Nigerian fried rice.
Ingredients
1. 4 cups of rice
2. Beef (or chicken) stock
3. 1 green pepper
4. 1/2 peas
5. 1 cup green beans
6. 5 medium sized carrots
7. 2 cups sweet corn
8. 2 cups diced hot dog (or cow liver)
9. 3 medium white onions
10. 2 scotch bonnet pepper
11. Vegetable Oil
12. 1-2 tablespoon Curry Powder (depending on how colourful you want the rice)
13. 1 teaspoon thyme
14. 4 stock cubes
15. Salt (to taste)
Preparation
1. Wash the rice until the water is clean and clear. This is to get rid of as much starch as possible so that the rice doesn't become soggy.
2. Put the rice in a pot, add the beef stock, enough water to cook the rice, curry powder, thyme, salt to taste and 3 stock cubes. Boil the rice until it is soft, but not too soft to avoid sogginess.
3. While the rice is cooking. It's time to dice the veggies. Cut the onion, carrot, hot dog, green pepper and scotch bonnet pepper into small cubes.
4. In a non-stick skillet, heat up some vegetable oil. Add the diced veggies including the peas, green beans and sweet corn. Add 1 stock cube and stir fry for about 10 minutes.
Note; When it is ready, divide into 3 portions and divide the rice into 3 portions as well.
5. In a different pot, heat up a cooking spoon of vegetable oil. Add one portion of the fried veggie and one portion of the rice as well. Stir fry for about 5 minutes. Repeat the process till you're done cooking the rice.
There you go!
Serve with coleslaw (or salad), fried chicken and a glass of juice. Enjoy!
